Ingredients
- 1 lb lean ground beef
- 4 oz lasagna noodles (broken into pieces)
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 28 oz canned crushed tomatoes
- 2 tsp Italian seasoning
- 4 cups beef broth
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Salt and pepper (to taste)
Instructions
- In a large pot over medium heat, heat olive oil. Sauté diced onion and minced garlic for about three minutes until soft.
- Add ground beef to the pot and cook until browned, breaking it apart as it cooks (about five to seven minutes). Season with salt and pepper.
- Stir in crushed tomatoes and Italian seasoning; let simmer for five minutes.
- Add broken lasagna noodles and beef broth to the pot. Bring to a boil, then reduce heat and simmer for about ten minutes until noodles are tender.
- Stir in half of the mozzarella until melted. Serve hot, garnished with remaining mozzarella and Parmesan.
