- 3–4 boneless, skinless chicken breasts
- 2 fresh lemons (juice and zest)
- 4 garlic cloves (minced)
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 3 tablespoons low-sodium soy sauce
- Olive oil, salt, and pepper to taste
Instructions
- Gather and prepare all ingredients: Zest and juice lemons, chop garlic.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook for about 6 minutes per side until golden brown.
- In a bowl, mix lemon juice, zest, garlic, soy sauce, and a splash of chicken broth; pour over the cooked chicken and simmer for 5 minutes.
- Rinse rice under cold water. In another pot, bring chicken broth to a boil, add rice, cover, and reduce heat; cook for about 15 minutes until liquid is absorbed.
- Fluff rice with a fork, place on plates, top with chicken slices, and drizzle extra sauce before serving.
