- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 16 oz full-fat cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh blackberries (plus more for topping)
- 1 tsp lavender extract
Instructions
- Preheat oven to 325°F (160°C). In a bowl, combine graham cracker crumbs with melted butter; press mixture firmly into the bottom of cheesecake molds.
- In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in lavender extract and gently fold in blackberries.
- Spoon filling over crusts until three-quarters full and top with additional blackberries.
- Bake for 20-25 minutes until set but slightly jiggly in the center.
- Allow cheesecakes to cool at room temperature before refrigerating for at least two hours prior to serving.
