- 1 pound large shrimp, peeled and deveined
- 8 ounces spaghetti or fettuccine
- 4 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- Juice of 1 lemon
- 1 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients. Mince the garlic and rinse the shrimp while boiling water for the pasta.
- In a large pot, bring salted water to a boil. Add pasta and cook until al dente according to package instructions.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
- Toss in fresh spinach and stir until wilted.
- Pour in heavy cream and add Parmesan cheese. Stir until cheese melts into a creamy sauce, then add lemon juice.
- Drain the pasta and add it directly into the skillet with the sauce. Toss until well-coated. Serve immediately with extra Parmesan on top if desired!
