Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces spaghetti or fettuccine
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • Juice of 1 lemon
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Mince the garlic and rinse the shrimp while boiling water for the pasta.
  2. In a large pot, bring salted water to a boil. Add pasta and cook until al dente according to package instructions.
  3. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
  4. Toss in fresh spinach and stir until wilted.
  5. Pour in heavy cream and add Parmesan cheese. Stir until cheese melts into a creamy sauce, then add lemon juice.
  6. Drain the pasta and add it directly into the skillet with the sauce. Toss until well-coated. Serve immediately with extra Parmesan on top if desired!
