- 8 ounces rotini or penne pasta
- 1 cup cherry tomatoes, halved

- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- 1. Cook the pasta: Bring salted water to a boil. Add pasta and cook until al dente according to package instructions. Drain and rinse under cold water.
- 2. Prepare the vegetables: In a large bowl, combine halved cherry tomatoes, diced cucumber, bell pepper, red onion, and sliced olives.
- 3. Mix the dressing: Whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
- 4. Combine ingredients: Add cooled pasta to the vegetable mixture. Pour dressing over the top and gently toss to coat all ingredients.
- 5. Finish with feta: Sprinkle crumbled feta cheese on top and mix gently until evenly distributed.
- 6. Chill before serving: Refrigerate for at least one hour for optimal flavor.
