- 1 lb sirloin steak
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- ½ cup feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Marinate the steak in olive oil, lemon juice, oregano, salt, and pepper for at least 30 minutes.
- Heat a grill pan over medium-high heat and cook the marinated steak for 4-5 minutes per side until desired doneness. Let it rest before slicing.
- While the steak rests, combine chickpeas, cucumber, cherry tomatoes, and red onion in a large bowl.
- In a small bowl, whisk together olive oil, lemon juice, and oregano for the dressing. Season with salt and pepper.
- Slice the rested steak against the grain and layer it over the salad base in bowls or plates.
- Drizzle with dressing and top with crumbled feta cheese. Serve immediately.
