- 3 boneless, skinless chicken breasts (about 1.5 lbs), diced
- 4 cloves fresh garlic, minced
- 8 oz penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp low-sodium soy sauce
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping the chicken into bite-sized pieces.
- In a large skillet over medium heat, heat olive oil. Add the chicken, season with salt and pepper, and sauté until browned (about 5 minutes).
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add uncooked pasta and enough water (or broth) to cover by an inch. Bring to a gentle boil, then reduce heat, cover, and simmer for about 10 minutes.
- Uncover the skillet, pour in heavy cream and soy sauce, then stir in grated Parmesan cheese until melted and combined.
- Serve hot, garnished with extra Parmesan or fresh herbs if desired.
