Instructions
- Soak rice noodles in hot water for 20-30 minutes until soft but firm. Drain.
- In a bowl, mix tamarind paste, soy sauce, brown sugar, and lime juice; set aside.
- In a skillet over medium heat, sauté minced garlic in oil until fragrant. Add chicken or shrimp; cook until done (about 5 minutes for shrimp or 7 minutes for chicken).
- Add soaked noodles and sauce to the skillet; toss gently for about 3 minutes.
- Remove from heat; toss in chopped green onions and crushed peanuts before serving.
