- 2 cod fillets (6 oz each)
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping the garlic and measuring everything.
- Heat olive oil in a skillet over medium heat until shimmering.
- Sear the cod fillets for 4 minutes on each side until golden brown; then remove from the skillet.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add diced tomatoes, salt, and pepper; simmer for 5 minutes.
- Stir in fresh basil and return the cod to the skillet. Cook together for an additional 2 minutes.
- Serve hot, drizzled with sauce.
