Hasselback Potatoes combine a crispy exterior with a creamy interior, making them an irresistible side dish for any meal. Perfectly baked, they’ll impress at your next gathering.

  • Total Time: 1 hour 5 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 4 medium Yukon Gold or Russet potatoes
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons melted butter
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • Fresh herbs (rosemary or thyme)
  • Grated cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes thoroughly, then pat dry.
  3. Slice each potato about 1/4 inch apart, stopping before cutting all the way through; a wooden spoon on either side helps prevent deep cuts.
  4. Drizzle olive oil over each potato, ensuring it seeps into the slits. Season generously with salt and pepper.
  5. Pour melted butter over the potatoes and place them on a lined baking sheet.
  6. Bake for 45-50 minutes until golden brown and crispy.
  7. If desired, add cheese in the last 5 minutes of baking for a gooey finish.
