Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the potatoes thoroughly, then pat dry.
- Slice each potato about 1/4 inch apart, stopping before cutting all the way through; a wooden spoon on either side helps prevent deep cuts.
- Drizzle olive oil over each potato, ensuring it seeps into the slits. Season generously with salt and pepper.
- Pour melted butter over the potatoes and place them on a lined baking sheet.
- Bake for 45-50 minutes until golden brown and crispy.
- If desired, add cheese in the last 5 minutes of baking for a gooey finish.
