- 1 whole chicken (4–5 pounds)
- 2 tablespoons extra virgin olive oil

- 3 cloves garlic, minced
- Fresh herbs (rosemary, thyme, or sage)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry.
- Rub olive oil over the entire chicken and season generously with salt, pepper, minced garlic, and fresh herbs.
- Tie the legs together with kitchen twine for even cooking.
- Place the chicken breast-side-up in a roasting pan and roast for about 1 hour and 15 minutes or until cooked through (internal temperature should be at least 165°F/74°C).
- Let the chicken rest for 10-15 minutes before carving.
