- 2 ripe avocados (about 400g)
- 1 cup low-sodium vegetable broth (240ml), chilled
- 2 tablespoons fresh lime juice (30ml)
- 2 garlic cloves, minced
- 1/4 cup fresh cilantro leaves (10g)
- Salt and pepper to taste
- 1/4 cup sour cream (60g) – Optional
Instructions
- Prepare your ingredients by halving the avocados, removing pits, and scooping flesh into a blender.
- Blend the avocado, minced garlic, fresh lime juice, and half of the vegetable broth until smooth, adding more broth for desired consistency.
- Taste and adjust seasoning with salt and pepper.
- Add cilantro leaves to the blender and blend briefly until combined.
- Transfer to a container, cover tightly, and chill in the refrigerator for at least 30 minutes.
- Serve in bowls garnished with sour cream or extra cilantro if desired.
