- 2 cups fresh cucumbers (sliced)
- 2 cups ripe tomatoes (chopped)
- ½ medium red onion (thinly sliced)
- ¼ cup fresh parsley (chopped)
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- 1. Wash cucumbers and tomatoes. Slice cucumbers into half-moons and chop tomatoes into bite-sized pieces.
- 2. Thinly slice the red onion and chop parsley. Add them to a large bowl with the cucumbers and tomatoes.
- 3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- 4. Pour the dressing over the veggies and gently toss until coated.
- 5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
