- 2 cups fresh cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls
- 1/2 cup fresh basil leaves, torn
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash cucumbers and tomatoes under cold water.
- Slice cucumbers into thin rounds and halve the cherry tomatoes.
- In a large mixing bowl, combine sliced cucumbers and halved cherry tomatoes; toss gently.
- Add fresh mozzarella balls and torn basil leaves to the bowl; mix well.
- Drizzle balsamic vinegar and olive oil over the mixture; season with salt and pepper. Toss gently.
- Serve on a platter or in individual bowls, garnished with additional basil if desired.
