- 2 large fresh cucumbers (sliced thin)
- 1 small red onion (finely sliced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup fresh dill (chopped)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons cider vinegar
- Salt and pepper to taste
Instructions
- Wash all vegetables thoroughly under cold water. Slice cucumbers into thin rounds and chop red onion finely.
- In a bowl, whisk together olive oil, cider vinegar, salt, and pepper until well combined.
- In a large mixing bowl, combine cucumbers, red onions, cherry tomatoes, and fresh dill. Drizzle dressing over veggies and toss gently to coat.
- Cover the salad with plastic wrap or transfer it to an airtight container. Chill in the refrigerator for at least 30 minutes to let flavors meld.
- Toss again just before serving and enjoy!
