Instructions
- Wash cucumbers thoroughly and slice them in half lengthwise. Scoop out the seeds to reduce moisture.
- Dice the seeded cucumber halves into small cubes.
- In a mixing bowl, combine Greek yogurt, lemon juice, minced garlic, salt, and pepper. Stir until well blended.
- Gently fold in diced cucumbers and chopped dill; mix carefully to keep cucumber pieces intact.
- Cover with plastic wrap and refrigerate for at least 30 minutes to let flavors meld.
- Serve chilled with pita chips or fresh veggies.
