- 1 cup fresh spinach
- 1 cup kale
- 1 medium cucumber, chopped
- 1 green apple, cored and quartered
- 2 tbsp freshly squeezed lemon juice
- 1-inch piece ginger root, grated
- 1 cup water or coconut water
Instructions
- Rinse spinach and kale under cold water and pat dry.
- Chop cucumber into chunks and core the green apple before slicing.
- In a blender, combine spinach, kale, cucumber, apple, ginger, lemon juice, and water or coconut water. Blend until smooth.
- Taste the mixture; adjust sweetness with honey or extra lemon if desired.
- Serve chilled over ice and garnish with cucumber slices or mint leaves.
