Instructions
- Brew strong coffee or espresso, stir in sugar while hot until dissolved, then let cool.
- In a mixing bowl, whip mascarpone cheese with vanilla extract and remaining sugar until smooth.
- Quickly dip each ladyfinger into the cooled coffee mixture—avoid soaking them too long.
- In a serving dish, layer dipped ladyfingers, whipped mascarpone, and fresh raspberries. Repeat layers until the dish is full.
- Dust the top layer generously with cocoa powder and garnish with additional raspberries.
- Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
