- 2 cups fresh sweet corn (about 2 ears)
- 1 ripe avocado, diced
- Juice of 1 lime
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Shuck and rinse the sweet corn. Boil cobs in salted water for 5-7 minutes until tender. Drain and cool before cutting off kernels.
- While the corn cools, dice the avocado and finely chop the red onion.
- In a large bowl, combine the cooled corn kernels, diced avocado, red onion, and chopped cilantro; toss gently.
- Squeeze fresh lime juice over the mixture and season with salt and pepper to taste. Gently fold to combine.
- Serve chilled or at room temperature in an attractive bowl.
