Instructions
- Wash all vegetables thoroughly. Dice tomatoes into bite-sized pieces.
- Slice avocados just before assembling to prevent browning.
- Finely chop the red onion and cilantro.
- In a large bowl, gently combine diced tomatoes, avocado slices, chopped onion, and cilantro.
- Drizzle olive oil and lime juice over the mixture. Season with salt and pepper.
