  • 6 cloves of fresh garlic
  • 1/2 cup unsalted butter
  • Fresh herbs (thyme or rosemary)
  • Salt and pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the whole chicken dry and season generously inside and out with salt and pepper.
  3. Melt unsalted butter in a bowl; mix in smashed garlic cloves and chopped herbs.
  4. Lift the skin over the breast area and spoon some garlic butter mixture underneath; rub the rest onto the outside of the chicken.
  5. Place chicken breast-side up in a roasting pan and roast for about 1 hour and 15 minutes until internal temperature reaches 165°F (74°C).
