Ingredients
- 1 whole chicken (4–5 pounds)
- 6 cloves of fresh garlic
- 1/2 cup unsalted butter
- Fresh herbs (thyme or rosemary)
- Salt and pepper
Instructions
- Preheat oven to 425°F (220°C).
- Pat the whole chicken dry and season generously inside and out with salt and pepper.
- Melt unsalted butter in a bowl; mix in smashed garlic cloves and chopped herbs.
- Lift the skin over the breast area and spoon some garlic butter mixture underneath; rub the rest onto the outside of the chicken.
- Place chicken breast-side up in a roasting pan and roast for about 1 hour and 15 minutes until internal temperature reaches 165°F (74°C).
- Allow resting for 10 minutes before carving.
