- 2 cups enchilada sauce (canned)
- 8 corn or flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (for serving)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- Fresh cilantro, chopped (for garnish)
- Sliced jalapeños (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium-high heat, cook the ground beef with chopped onions and garlic until browned (5-7 minutes). Drain excess fat.
- Stir in half of the enchilada sauce and spices like cumin or chili powder; let simmer for 5 minutes.
- Spoon filling into each tortilla and roll tightly. Place seam-side down in a greased baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with shredded cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden. Let rest for 5 minutes before serving with sour cream and toppings.
