- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 2 tsp Dijon mustard
- 8 oz egg noodles
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Prepare your ingredients by chopping onions, slicing mushrooms, and mincing garlic.
- In a large skillet over medium heat, cook the ground beef until browned and crumbly. Add chopped onions and sauté until translucent.
- Add minced garlic and sliced mushrooms; cook until tender.
- Pour in beef broth and Dijon mustard, stirring well. Simmer for 5 minutes.
- Remove from heat; stir in sour cream until smooth. Season with salt and pepper.
- Meanwhile, cook egg noodles according to package instructions; drain and toss with olive oil.
- Serve the creamy beef stroganoff over the noodles garnished with parsley if desired.
