Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the chicken breasts into thin strips and place them in a large bowl with sliced bell peppers and red onion. Drizzle olive oil over the mixture.
- Sprinkle fajita seasoning evenly over the ingredients and toss until well-coated.
- Spread the seasoned mixture on the prepared baking sheet without overcrowding for even roasting.
- Roast in the preheated oven for 20-25 minutes, until chicken is cooked through (165°F/75°C) and vegetables are tender.
- Serve immediately, wrapped in warm tortillas or over rice.
