- 1 lb large shrimp, deveined
- 1 cup jasmine rice
- 2 green onions, thinly sliced
- 1 medium cucumber, julienned
- 1/4 cup mayonnaise
- 2 tbsp sriracha sauce
- 2 tbsp low-sodium soy sauce
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, bring 2 cups of water to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for 15-20 minutes until tender.
- While the rice cooks, heat oil in a skillet over medium-high heat. Add shrimp and sauté for 3-4 minutes until they turn pink and opaque.
- In a bowl, mix mayonnaise and sriracha; adjust heat to your preference.
- To assemble each bowl: start with a scoop of rice, top with sautéed shrimp, cucumber slices, and green onions.
- Drizzle generously with spicy mayo and serve immediately.
