  • Total Time: 30 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 1 lb large shrimp, deveined
  • 1 cup jasmine rice
  • 2 green onions, thinly sliced
  • 1 medium cucumber, julienned
  • 1/4 cup mayonnaise
  • 2 tbsp sriracha sauce
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, bring 2 cups of water to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for 15-20 minutes until tender.
  3. While the rice cooks, heat oil in a skillet over medium-high heat. Add shrimp and sauté for 3-4 minutes until they turn pink and opaque.
  4. In a bowl, mix mayonnaise and sriracha; adjust heat to your preference.
  5. To assemble each bowl: start with a scoop of rice, top with sautéed shrimp, cucumber slices, and green onions.
  6. Drizzle generously with spicy mayo and serve immediately.
