- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes in oil
- 1 tablespoon Italian seasoning
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach leaves
- 1/4 cup grated Parmesan cheese
Instructions
- Gather and prep your ingredients by chopping sun-dried tomatoes and mincing garlic.
- (Optional) Sear the chicken in a skillet with olive oil until golden brown, about 3-4 minutes per side.
- Place the seared chicken in the crock pot; add heavy cream, chicken broth, garlic, sun-dried tomatoes, and Italian seasoning.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- About 30 minutes before serving, stir in fresh spinach and allow it to wilt. Top with Parmesan cheese before serving.
