Ingredients
- 1 pound boneless skinless chicken breasts
- 1 cup jasmine or basmati rice
- 3–4 cloves fresh garlic, minced
- 1 tablespoon chili powder
- 2 tablespoons low-sodium soy sauce
- Juice of 1 lime
- Olive oil for cooking
- Fresh cilantro or green onions for garnish
Instructions
- Rinse the rice under cold water and cook according to package instructions (15-20 minutes).
- In a bowl, mix minced garlic, chili powder, soy sauce, and lime juice. Add cubed chicken and marinate for at least 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for about 5-7 minutes until browned and fully cooked.
- Assemble by placing cooked rice in bowls topped with chicken.
- Garnish with fresh herbs and serve with additional lime juice if desired.
