Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- In a skillet, heat olive oil over medium heat and sauté chopped onions until translucent; add minced garlic until fragrant.
- Brown ground turkey in the skillet; drain excess fat.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper; heat through.
- Remove tops and seeds from bell peppers; stuff them generously with the turkey mixture.
- Arrange stuffed peppers upright in the baking dish, cover with foil, and bake for 25-30 minutes until tender.
