- 1 lb fresh salmon fillets, cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/4 cup sweet chili sauce
- 2 tbsp sriracha sauce (adjust to taste)
- 1 tsp garlic powder
- 2 tbsp low-sodium soy sauce
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the salmon pieces dry with paper towels.
- In a bowl, combine panko breadcrumbs, garlic powder, and a pinch of salt.
- In another bowl, whisk together sweet chili sauce, sriracha sauce, and soy sauce.
- Dip each salmon piece into the glaze and then roll in panko breadcrumbs until fully coated. Place on the baking sheet in a single layer.
- Drizzle olive oil over the bites and bake for 12-15 minutes or until golden brown and crispy.
