- 2 pounds boneless chicken thighs
- Assorted bell peppers (red, yellow, green)
- 1 red onion
- 1 zucchini
- 3 tablespoons olive oil
- 4 garlic cloves
- Juice of 1 lemon
- 1 teaspoon cumin powder
- Salt and pepper to taste
Instructions
- In a large bowl, mix minced garlic, lemon juice, olive oil, cumin, salt, and pepper to prepare the marinade.
- Coat the chicken thighs in the marinade. Cover and refrigerate for at least one hour or overnight for deeper flavor.
- Preheat your grill to medium-high heat (400°F/200°C).
- Thread marinated chicken onto skewers alternately with bell peppers, onion wedges, and zucchini slices.
- Grill the kebabs for 15-20 minutes, turning occasionally until the internal temperature reaches 165°F (74°C).
- Serve hot with your choice of dips.
