- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tbsp honey
- 1 cup fresh pineapple, diced
- 2 ripe pears, diced
- 1/4 cup red onion, finely minced
- Juice of 1 lime
- 8 small tortillas
Instructions
- Marinate the chicken: In a bowl, combine soy sauce, brown sugar, honey, and garlic. Add chicken breasts and marinate for at least 30 minutes.
- Grill the chicken: Preheat your grill to medium heat. Remove chicken from marinade and grill for about 6-7 minutes per side until cooked through.
- Prepare the salsa: While chicken cooks, mix diced pineapple, pears, red onion, and lime juice in a bowl.
- Warm tortillas: Heat tortillas in a skillet or over an open flame until soft.
- Assemble tacos: Slice the grilled chicken and layer it onto warm tortillas. Top generously with pineapple pear salsa.
