- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil
- 3 cloves fresh garlic, minced
- 1 large sweet onion, sliced
- 1 bell pepper (any color), sliced
- 1 cup mushrooms, sliced
- 6 slices provolone cheese
- 4 hoagie rolls
- Salt and pepper to taste
Instructions
- Slice chicken breasts into thin strips and season with salt and pepper.
- In a large skillet over medium heat, add olive oil and sauté onions, bell peppers, and mushrooms until tender (about 7 minutes).
- Push veggies to the side, add chicken strips, and cook until golden brown (5-7 minutes).
- Sprinkle provolone cheese over the chicken mixture; cover the skillet until cheese melts.
- Scoop generous portions into hoagie rolls and serve hot.
