- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil
- 1 medium yellow onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup barbecue sauce (your favorite brand)
- ½ cup low-sodium chicken broth
- 4 soft burger buns or brioche
- 1 tsp smoked paprika
- ½ tsp cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 6-7 minutes per side until golden brown.
- Add chopped onions and minced garlic; sauté for about 3 minutes until fragrant.
- Pour in barbecue sauce and chicken broth, covering half the chicken with liquid.
- Reduce heat to low, cover, and simmer for 30-35 minutes until chicken is tender.
- Remove chicken from skillet; shred using two forks and return to skillet to mix with remaining sauce for an additional 5 minutes.
