Instructions
- Wash and peel the carrots, then grate them using a box grater or food processor.
- In a small bowl, whisk together the olive oil, lemon juice, and honey until well combined.
- In a large bowl, combine the grated carrots and chopped herbs. Pour the dressing over them and toss until evenly coated.
- Season with salt and pepper according to your taste.
- For enhanced flavor, chill in the refrigerator for about 30 minutes before serving.
