- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup white chocolate chips
- 16 oz cream cheese, softened
- 1 cup coconut cream
- 1 cup pineapple chunks, drained
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat oven to 325°F (160°C) and grease a springform pan.
- Combine graham cracker crumbs and melted butter; press into the pan and bake for 10 minutes.
- Melt white chocolate chips until smooth.
- In a bowl, beat cream cheese and sugar until fluffy. Add melted white chocolate, coconut cream, vanilla extract, and eggs one at a time while mixing well.
- Gently fold in pineapple chunks; pour the filling over the crust.
- Bake for about 60 minutes until edges are set but center jiggles slightly. Cool in the oven with the door ajar for an hour before refrigerating for at least four hours.
