Egg and Avocado Toast
  • 4 large eggs poached or fried
  • 4 slices whole grain bread toasted
  • 2 medium avocados ripe
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes optional

Method
 

Scrambled Eggs
  1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat the butter in a frying pan over medium heat until melted.
  3. Pour the egg mixture into the pan and cook, stirring gently, until the eggs are just set.
  4. Remove from heat and serve immediately.
Vegetable Omelette
  1. In a mixing bowl, beat the eggs until well combined.
  2. Heat olive oil in a frying pan over medium heat.
  3. Add the chopped bell peppers and onions, sautéing until softened.
  4. Add the spinach and cook until wilted.
  5. Pour the beaten eggs over the vegetables and cook until the edges are set, then fold and serve.
Egg and Avocado Toast
  1. Toast the slices of whole grain bread until golden brown.
