Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 2 cups water
  • 1 teaspoon salt
Flavoring
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro chopped

Method
 

Cooking Rice
  1. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes.
Flavoring Rice
  1. Fluff the rice with a fork and add the lime juice, olive oil, and chopped cilantro.
  2. Gently mix until all ingredients are well combined.
  3. Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.

Notes

This cilantro lime rice can be served warm or at room temperature. It pairs well with grilled meats, tacos, or as a base for burrito bowls.
