- 1 cup rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey (or maple syrup)
- Zest of 1 lemon
- 1/2 cup unsweetened shredded coconut
- 2 tbsp chia seeds (optional)
Instructions
- Gather all ingredients and measure them out.
- In a large bowl, mix rolled oats, almond butter, honey or maple syrup, lemon zest, and shredded coconut until sticky.
- If using chia seeds, fold them in gently.
- Scoop small portions and roll into balls about 1 inch in diameter.
- Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
- Enjoy immediately or store leftovers in an airtight container in the fridge for up to one week.
