- 8 oz spaghetti or penne
- 4 cups fresh spinach
- 3 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, then drain, reserving some cooking water.
- Sauté Garlic and Spinach: In a skillet over medium heat, add olive oil and minced garlic. Cook until fragrant (about 30 seconds), then add fresh spinach until wilted.
- Combine: Add the drained pasta to the skillet with spinach and garlic. Pour in reserved pasta water if needed for moisture.
- Season: Stir in red pepper flakes, salt, and pepper. Toss well to combine.
- Finish with Cheese: Remove from heat and grate Parmesan over the top, tossing until melted.
