- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 medium sweet onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- ¼ tsp crushed red pepper flakes (adjust to taste)
- ½ cup freshly grated Parmesan cheese
Instructions
- Prepare your ingredients: Dice the peppers and onion; mince the garlic.
- Sauté the sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until golden brown (about 5-7 minutes).
- Add vegetables: Stir in onions, bell peppers, and garlic; cook until onions are translucent (approximately 4-5 minutes).
- Cook pasta: Boil penne according to package instructions until al dente. Drain and reserve some pasta water.
- Combine: Add cooked pasta to the skillet along with crushed red pepper flakes. Toss gently over low heat, adding reserved pasta water for desired consistency.
- Finish with cheese: Remove from heat and stir in freshly grated Parmesan until melted.
