Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.
- In a mixing bowl, combine flour, sugar, baking powder, and salt. Mix in softened butter until crumbly.
- Add eggs and vanilla extract; beat until smooth.
- Melt white chocolate chips in the microwave and fold into the batter.
- Gently fold in fresh raspberries until evenly distributed.
- Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let cakes cool before frosting with whipped heavy cream mixed with melted white chocolate chips and powdered sugar.
