- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs (room temperature)
- 2 tbsp red food coloring
- 8 oz cream cheese (softened)
- 1/2 cup heavy cream (whipped)
- Fresh strawberries for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease two round cake pans.
- In a bowl, whisk together flour, sugar, cocoa powder, baking soda, and a pinch of salt.
- In another bowl, combine vegetable oil, buttermilk, eggs, and red food coloring until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow cakes to cool completely.
- For the cheesecake layer, beat cream cheese and sugar until smooth; fold in whipped heavy cream.
- Once cooled, layer cakes with half of the cheesecake mixture in between and on top. Garnish with fresh strawberries.
