  2. In a bowl, whisk together flour, sugar, cocoa powder, baking soda, and a pinch of salt.
  3. In another bowl, combine vegetable oil, buttermilk, eggs, and red food coloring until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow cakes to cool completely.
  6. For the cheesecake layer, beat cream cheese and sugar until smooth; fold in whipped heavy cream.
  7. Once cooled, layer cakes with half of the cheesecake mixture in between and on top. Garnish with fresh strawberries.
