Ingredients
  

Chicken and Rice
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cups cooked jasmine rice
  • 1 tablespoon olive oil for cooking chicken
Vegetables
  • 1 cup shredded carrots
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon lime juice

Method
 

Cook the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  2. Remove from heat and set aside.
Prepare the Bang Bang Sauce
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Assemble the Bowls
  1. In serving bowls, layer cooked jasmine rice, followed by the cooked chicken, shredded carrots, cucumber, and red bell pepper.
  2. Drizzle the bang bang sauce over the top and serve immediately.

Notes

Feel free to add other vegetables or toppings such as green onions or sesame seeds for extra flavor.
