Method
Marinate Chicken
- In a bowl, combine chicken pieces, soy sauce, and cornstarch. Mix well and let marinate for 15 minutes.
Prepare Sauce
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, and sugar. Set aside.
Cook Chicken
- Heat vegetable oil in a wok over medium-high heat. Add marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes.
Add Vegetables
- Add bell pepper, broccoli, and carrots to the wok. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
Combine and Serve
- Pour the sauce over the chicken and vegetables, stirring to coat evenly. Add cashews and green onions, and stir-fry for an additional 2 minutes. Serve hot.
