Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and black pepper.
- Mix well until all ingredients are evenly combined.
Baking
- Pour the mixture into a greased 9x13 inch baking dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
For added flavor, you can sauté some onions and garlic before mixing them into the casserole. This dish can be made ahead of time and stored in the refrigerator before baking.
