Chicken
  • 4 pieces boneless chicken breasts skinless
Sweet Potatoes
  • 2 large sweet potatoes peeled and cubed
Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
Optional Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and thyme.
  3. Add the chicken breasts to the bowl and coat them evenly with the seasoning mixture.
  4. Place the cubed sweet potatoes on a baking sheet and drizzle with a little olive oil, then sprinkle with salt and pepper.
Cooking
  1. Arrange the seasoned chicken breasts on the baking sheet with the sweet potatoes.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  3. Remove from the oven and let rest for a few minutes before serving.
  4. Garnish with chopped parsley if desired.
