cilantro lime rice

Ingredients
  

Rice
  • 1 cup long-grain white rice rinsed
  • 2 cups water
Flavoring
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 cup fresh cilantro chopped

Method
 

Cook the Rice
  1. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat.
  2. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and water is absorbed.
  3. Remove from heat and let it sit, covered, for 5 minutes.
Flavor the Rice
  1. Fluff the rice with a fork and add lime juice, olive oil, salt, and chopped cilantro.
  2. Stir gently to combine all ingredients evenly.
  3. Serve warm as a side dish.
