cilantro lime rice

Ingredients
  

Rice
  • 1 cup long-grain white rice rinsed
  • 2 cups water
  • 1 teaspoon salt
Flavorings
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro chopped

Method
 

Cooking the Rice
  1. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.
  3. Remove from heat and let it sit, covered, for 5 minutes.
Finishing Touches
  1. Fluff the rice with a fork and stir in the lime juice, olive oil, and chopped cilantro.
  2. Mix well to combine all ingredients and serve warm.

Notes

For extra flavor, you can add a pinch of cumin or garlic powder to the rice while cooking.
