Cook Chicken
- Heat the skillet over medium heat and add a splash of oil. Once hot, add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Prepare Sauce
- In the same skillet, add garlic and ginger. Sauté for 1-2 minutes until fragrant.
- Stir in the curry powder, turmeric, salt, and pepper, cooking for another minute.
- Pour in the coconut milk, soy sauce, fish sauce, brown sugar, and lime juice. Stir to combine.
Combine
- Add the cooked chicken back into the skillet. Simmer for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Serve
- Serve the coconut chicken hot, garnished with fresh cilantro and lime wedges.
Notes
Serve with jasmine rice or noodles to soak up the delicious coconut sauce.
