Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
Coconut Sauce
  • 1 can coconut milk full-fat for creaminess
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp fish sauce optional
  • 1 tbsp brown sugar to balance flavors
  • 1 tbsp lime juice freshly squeezed
Spices
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cook Chicken
  1. Heat the skillet over medium heat and add a splash of oil. Once hot, add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Prepare Sauce
  1. In the same skillet, add garlic and ginger. Sauté for 1-2 minutes until fragrant.
  2. Stir in the curry powder, turmeric, salt, and pepper, cooking for another minute.
  3. Pour in the coconut milk, soy sauce, fish sauce, brown sugar, and lime juice. Stir to combine.
Combine
  1. Add the cooked chicken back into the skillet. Simmer for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Serve
  1. Serve the coconut chicken hot, garnished with fresh cilantro and lime wedges.

Notes

Serve with jasmine rice or noodles to soak up the delicious coconut sauce.
