Ingredients
  

Salad Ingredients
  • 2 medium cucumbers peeled and diced
  • 3 medium tomatoes diced
  • 1 small red onion finely chopped
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Vegetables
  1. Peel and dice the cucumbers into bite-sized pieces.
  2. Dice the tomatoes and finely chop the red onion.
  3. Chop the fresh parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper.
Combine and Serve
  1. In a large mixing bowl, combine the diced cucumbers, tomatoes, red onion, feta cheese, and parsley.
  2. Pour the dressing over the salad and toss gently to combine.
  3. Transfer to a serving dish and serve immediately.

Notes

This salad is best served fresh but can be stored in the refrigerator for up to 1 day. For added flavor, let the salad sit for 10 minutes before serving.
